BIOTECH FAST
BIOTECH FAST represents an evolution in the management of the yeast rehydration process in the winery. It involves the use of water at room temperature and allows the use of activators in fermentation to be reconsidered and optimised.
Biotech Fast guarantees excellent results both in terms of fermentation kinetics and the qualitative and aromatic profile of the wines, all of which is proven by the numerous laboratory and large-scale experiments carried out in Italy, France and New Zealand in collaboration with important research centers such as the ISVV in Bordeaux and the University of Verona.
The numerous tests, subjected to the analysis of expert technicians and tasters, showed no organoleptic differences compared to wines produced using the classic rehydration method.
As part of the Biotech Fast research project, the innovative IDROFAST was developed: an automated rehydrator that allows for the rapid and correct inoculation of active dry yeasts (A.D.Y.), with consequent savings in terms of costs and time. Its particular structure allows IDROFAST to maximize the oxygenation of A.D.Y. during the rehydration phase, ensuring cell wall thickening and a complete dissolution in the aqueous medium. It finds application in both Biotech Fast technology active dry yeasts and conventional active dry yeasts.
