LISOPEC is an enzymatic compound derived from Aspergillus niger and is used for pref-ermentation white wines treatments. It is able to degrade at low temperature pectines derived from pressing. This process is necessary because pectines prevent flocculation during clarification. LISOPEC allows optimal level of NTU for fermentation, eases the release of aromatic compounds and improves filterability.
