STABLEZYM is an acid protease obtained from a selected strain of Aspergillus niger, specifically tailored for the clarification process. Its high proteolytic activity is in fact capable of rapidly degrading the proteins in the must, preventing the risk of protein alteration (casse) in wines. Thanks to its special formulation, STABLEZYM makes it possible to limit the use of bentonites in oenology.
