HIGHLY PURIFIED MANNOPROTEINS FOR WINE STABILIZATION
Mannoproteins play a fundamental role in terms of structural integrity and the strength of the yeast cell wall. During cellular lysis processes, for example in the course of refining sur lies, mannoproteins tend to pass slowly into wine where, especially those with a molecular weight of around 40 Kdalton, perform an excellent colloidal protection action against of tartaric and protein precipitations, besides determining a general improvement from the organoleptic point of view. MANNOLIFE is a concentrate of these particular classes of mannoproteins, extracted with targeted selective and non-invasive processes, aimed at obtaining mannoproteins with specific chemical and structural characteristics, such as to express maximum functionality in terms of colloidal protection. In addition to the stabilizing action, MANNOLIFE contributes positively to the organoleptic improvement of the treated wines, improving the body and structure, giving greater softness, balance and roundness to the palate. Attenuates the feelings of roughness and sharpness, especially in young red wines. From an olfactory point of view, greater complexity and persistence will be obtained, a mitigation of alcoholic sensations, an optimization of existing aromatic sensations.
