The crystallization of this salt is in fact a rather complex phenomenon. The structure and the right size of the micronized tartrates play a key role in the formation of crystals. On this aspect ENOLIFE has focused its attention on the development of STABILCALC. The result is the achievement of a rapid and safe stabilization of wines against calcium. STABILCALC microcrystals also act as enucleation agents for potassium bitartrate, thus offering additional security against tartaric instability due to potassium.
