Enolife has been collaborating for several yearswith the University of Florencein order to ble able to interpret and modulate such a complex parameter. During this research work, we investigated how the addition of oenological tannins in severals wines, different in nature and refinement, impacts on the redox potential. We have highlighted how they represent a powerful tool in the hands of the oenologist for the management of these values essential in wine production. Enolife has therefor developed the new line of tannins “ALPHA TAN®”, capable of maintaining the balance of wine and stabilizing the redox potential.
The research of the equlibrium, the right blend, the full-bodied and imposing impact the wine allows the MAGNUM tannin to have a stabilizing and anti-oxidase action always aimed at protecting the structure and intrinsic quality. It helps clarification by stabilizing unstable proteins and chelating iron, copper and other metals responsible for the oxidation of wines. What makes MAGNUM tannin unique is the extraordinary union between the technical and organoleptic features of the product, which allow the cellar tachnician to be able to itervene in the pre-bottling phases. This deep research work has made it possible to obtain a product with a board facet, tailored to enchance the aromatic hints already present in the treated wines. The use of MAGNUM may enchance sweet and toasted notes, depending on the characteristics of the wine. Furthermore, it can contribute to the evolution of the treated product, giving softness and intensity.
