Enolife has been collaborating for several yearswith the University of Florencein order to ble able to interpret and modulate such a complex parameter. During this research work, we investigated how the addition of oenological tannins in severals wines, different in nature and refinement, impacts on the redox potential. We have highlighted how they represent a powerful tool in the hands of the oenologist for the management of these values essential in wine production. Enolife has therefor developed the new line of tannins “ALPHA TAN®”, capable of maintaining the balance of wine and stabilizing the redox potential.
A particular charateristich of SLOW tannin is the tendency to reduce the redox potential of the treated wines, making them more long-lived and protected over time. This deep research work for a perfect balance has ensured a complex and functional product, aimed at enchancing the aromatic scents already present in the trated wines, with fresh and fruity notes.
