Selected yeast strain of the species Kluyveromyces thermotolerans, particularly suitable for the production of rosè wines. The main properties are thosse of being able to naturally enhance sweet florarl and citrus aromatic notes and the ability to naturally biocidify musts, thus producing fresher and more elegant wines.
